Banana bread with Greek yogurt

Ingredients:

  • 1 ½ cups of flour
  • 1 ½ teaspoons of baking soda
  • ½ teaspoon of salt
  • 2 eggs
  • 2 large ripe bananas
  • ½ cup of Greek yogurt
  • ¼ cup of maple syrup or honey
  • ¼ cup of brown sugar
  • ½ cup of raisins or cranberries or chopped chocolate

Preparation:

Heat the oven up to 180 degrees. In a bowl, mix the flour, the baking soda and the salt. In another bowl whisk the eggs and add the blended bananas, the Greek yogurt, the honey and the brown sugar. Mix this mixture with the mixture of flour and stir it fine until the two mixtures unite, so that you get a compact mixture.

If you want you can add raisins or other ingredients to improve the taste.

Bake for about 40 minutes, then remove the bread from the oven and let it cool down for about ten minutes, then you can serve it.

Banana bread with cinnamon

Ingredients:

  • 1 1/3 cups of flour
  • ¾ cup of white sugar
  • ¾ cup of brown sugar
  • 1 cup of blended bananas
  • ½ cup of oil / recommendations of the coconut /
  • 1/3 cup of buttermilk
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • ½ teaspoon of salt

For the cinnamon topping:

  • ½ cup of flour
  • ½ cup of brown sugar
  • 4 tablespoons of butter
  • 1 teaspoon of cinnamon

Preparation:

Whisk the eggs, the buttermilk and the oil. In a separate bowl mix the flour, salt, baking soda and the cinnamon, then unite the dry and the wet ingredients. Add the blended banana, the sugar and the vanilla. Pour batter into the pan. Then make cinnamon topping. Mix all ingredients together and coat the dough the cinnamon topping. Bake the bread in the preheated oven at 180 degrees for about 40 minutes.

Banana bread with cranberries

Ingredients:

  • 120g of butter
  • 200g of sugar
  • 2 large eggs
  • 180g of flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • 250g of blended bananas
  • 125ml of sour cream
  • 1 teaspoon of vanilla extract
  • 60g of cranberries
  • A handful of walnuts

Preparation:

Preheat oven up to 180 degrees. Coat the pan in which you are going to bake the bread with butter. Then take a bowl and in it mix the sugar and the previously softened butter, and mix them gently in order to be airy. Next add the eggs and mix the ingredients until they are combined. Then, in another bowl, mix the flour, the baking powder and the salt. Add butter to this mixture and mix until the mixture gets united.

In the same mixture add the mashed bananas, the sour cream and the vanilla, which also need to be blended. Put the chopped walnuts and the cranberries into the mixture and then pour this bread mixture into the pan. Bake in the oven for about an hour and ten minutes. Let it rest for ten minutes, and then remove the bread from the pan and allow it to cool.
