Ingredients:

  • 50 organic garlic cloves (5 garlic bulbs), cleaned and peeled
  • 2 tbsps. of olive oil
  • 2 tbsps. of butter
  • 2 large red onions, diced
  • 1 tbsp. of fresh thyme, chopped
  • 6 cups (250ml) of chicken broth
  • fresh or dried herbs, for the taste (parsley, bay leaves or anything of your choice)
  • 3 cups of stale bread, cubed or crushed
  • 1 cup of sour cream

Preparation:

First of all you need to turn on your oven and preheat it up to 350°F. Then clean the garlic and spread the cloves on an aluminum foil. Spray them with olive oil and wrap them up nicely. Put the garlic in the preheated oven and leave them to cook for 90 minutes.

In the meantime, take 2 tablespoons of olive oil and 2 tablespoons of butter and put them in a sauce pan. When the butter has melted add the diced onion and cook it for about 10 minutes.

Once the garlic cloves have cooled down, add them to the onion. Also you can add in fresh thyme and herbs of your choice. Now you need toreduce the temperature and add in the bread crumbs or cubes.

You need to cook this mixture for about 5 minutes or until the bread gets soft. Take the herbs off the mixture and blend it until you get a unique mixture. Put this mixture back in the sauce pan and add the sour cream. Put it on the heat just for a while. You can add salt and pepper to improve the taste. And that’s all, your garlic soup is ready.
